Difference between a Lactose-Free Cheese and a Regular Cheese

The main difference between a lactose-free cheese and a regular cheese lies in the amount of lactose present in each.

A regular cheese is made from cow’s, sheep’s, or goat’s milk and contains lactose, the natural sugar in milk. Lactose is digested by an enzyme called lactase, which some people don’t produce in sufficient quantities, resulting in lactose intolerance. This means these people experience stomach upset, bloating, and other digestive issues when consuming conventional dairy products.

On the other hand, a lactose-free cheese is made using special techniques to remove or reduce the amount of lactose present in the cheese. This is achieved by adding the enzyme lactase during the cheesemaking process, which breaks down the lactose into simpler sugars that are easier to digest. As a result, lactose-free cheeses contain very low or no lactose, making them more suitable for people with lactose intolerance.

In terms of taste and texture, lactose-free cheeses can be very similar to regular cheeses. However, due to the removal or reduction of lactose, some lactose-free cheeses may have a slightly different texture or a slightly sweeter taste.

It’s important to note that lactose intolerance can vary from person to person, so some people with intolerance may still be able to tolerate small amounts of lactose in regular cheeses.
